Rice Casserole

Rice Casserole
 
1 cup long-grain rice -- uncooked
1/2 cup oil
1 cup sharp cheddar cheese
1/2 jar stuffed olives -- chopped
1 can tomatoes OR Ro-Tel tomatoes
1/2 cup onions
1 cup water
Salt and pepper -- to taste
 
Mix all of the ingredients in a large casserole. Cook for 1 hour, covered, at 350°, or until rice is tender.
Jerry might eat this, if I don't put the olives into it...

CHEESY MASHED-POTATO SOUFFLE

CHEESY MASHED-POTATO SOUFFLE
MAKES 8 SERVINGS.

1 1/4 cups milk
2 tbs flour
2 2/3 cups water
2 2/3 cups instant potato flakes
1/4 cup plain Greek yogurt
2 tbs butter, melted
1 tsp baking powder
3 eggs, beaten
1 oz Parmesan cheese, grated
Heat oven to 400 degrees. Coat a souffle dish with cooking spray. Combine 1/4 cup milk and flour. Bring flour mixture and water to a boil in a pan, simmer 2 min. Remove from heat, stir in remaining milk and potato flakes. Add yogurt and remaining ingredients, stir until combined. Spoon into dish. Bake 45 min. or until puffy. Turn on broiler. Broil souffle until lightly browned. SERVE immediately.

Today, I am wearing a pink top with rhinestone flowers, black sweat pants, A white bandana with colorful designs on it. Thick, fuzzy socks and white (dirty) canvas shoes.

Vanilla Chocolate-Chip Pudding Pops (Diet)


Vanilla Chocolate-Chip Pudding Pops
 
1 oz fat-free, sugar-free instant vanilla pudding mix
2 c fat-free milk
2 tbsp mini chocolate chips, semi-sweet
 
Prepare instant pudding according to package directions.
 
Spoon 1 teaspoon of chips into the bottom of each of six 3-ounce paper cups; fill cups with pudding, cover with foil and poke a wooden popsicle stick through the center of each. Freeze until firm, about 3 hours. To eat, dip bottom of cup into warm water for about 10 seconds; remove foil, peel off cup and enjoy. Get reminders on your mobile, Yahoo! Messenger, and email.

Wheat Crackers

Wheat Crackers
 
 1 c Whole wheat flour
1/4 c Wheat germ
1 t Salt
1/2 c Water
1 c All purpose flour
1/4 c Brown sugar
 1/2 t Baking soda
1/4 c butter, softened
 
 In a medium bowl, mix flours, wheat germ, sugar, salt and soda. Stir in water and butter until smooth dough forms. Divide in half; cover; let stand 10 minutes. Place half the dough on a lightly oiled 17 x 14 inch baking sheet; roll out to a 16 1/2 inch x 13 1/2 inch rectangle. Prick all over with a fork, cut in 1 1/2 inch squares, brush with water and sprinkle with additional salt (opt.). Bake at 400 degrees for 8 minutes until crisp but not overbrowned. Remove to racks to cool. Repeat with second half

Oatmeal Animal Crackers

Oatmeal Animal Crackers

2 cups sugar                                   1/2 cup shortening
2 cups old-fashioned oats          1/2 cup hot water
1 tsp baking soda                           1 tbsp vanilla
1/4 tsp salt                                       2 to 2 1/2 cups flour
 

 In a large bowl, combine the sugar, oats, baking soda, and salt. Cut in the shortening until crumbly. Add the water and vanilla. Stir until blended. Add enough flour to form a stiff dough. On a lightly floured surface, roll the dough to 1/8 inch thickness. Cut into rectangles or use a floured cookie cutters. Using a floured spatula, transfer to greased baking sheets. Place 2 inches apart. Bake at 350 F for 8-10 minutes or until lightly browned. Remove to wire racks to cool. Makes about 4 dozen

Oat Toffee Bars

 
Oat Toffee Bars
 
1 cup butter, softened
1 cup packed light brown sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1 1/3 cup toffee chips - divided use
3 cups quick or old fashioned oats
 
Heat oven to 350°F (175°C). Grease 13 x 9 x 2-inch baking pan; set
aside.
Beat butter and brown sugar in large bowl until well blended. Add eggs
and vanilla; beat well.
Stir together flour, baking soda, cinnamon and salt. Gradually add to
butter mixture, beating until blended.
Set aside 1/2 cup toffee chips. Stir remaining chips and oats into
batter (batter will be stiff).
Spread batter into prepared pan; sprinkle reserved 1/2 cup chips over
surface.
Bake 25 minutes or until wooden pick inserted in center comes out clean.
Cool completely in pan on wire rack. Cut into bars.
Makes 36 bars.
